Preheat oven to 180°C. In a bowl, mix yoghurt, turmeric, garlic, lemon juice, salt and pepper. Toss chicken and veggies in the sauce and place in a casserole dish. Drizzle lightly with olive oil. Bake covered for 30 minutes, then uncover and bake for another 10 to 15 minutes until golden and cooked through.

Cook lentils until just tender and set aside. In a pan, sauté onion, garlic and spices until soft. Add butternut, red pepper, tomatoes and a splash of water. Simmer for 10 minutes. Combine with lentils in a casserole dish, season, and bake at 180°C for 30–35 minutes until bubbling and golden.
KID-FRIENDLY BEEF MINCE BAKE
A lighter take on a traditional mince casserole, this kid-approved dish sneaks in lots of immune-boosting veggies like spinach and carrots with and lots of fibre.

Sauté onion, mince and garlic powder in a little olive oil until browned. Add carrot, courgette, spinach, oregano and tomatoes. Simmer for 10 minutes. Pour into a casserole dish. Whisk eggs and pour over the top. Sprinkle with a small amount of cheese if using. Bake at 180°C for 30 minutes until golden and set.
