Ingredients:
1 whole chicken
2 carrots, chopped
2 cups butternut, cubed
2 sweet potatoes, cubed
1 large onion, sliced
2 tbsp olive oil
2 cloves garlic, crushed
1 tsp paprika
1 tsp dried mixed herbs
Salt and pepper to taste
Method:
Preheat the oven to 180°C. Place the chopped vegetables and onion in a large roasting tray and drizzle with olive oil, garlic, paprika, herbs, salt and pepper. Toss well to coat.
Pat the chicken dry and season lightly with salt, pepper and a sprinkle of herbs. Place the chicken on top of the vegetables.
Roast uncovered for 1 hour 15 minutes to 1 hour 30 minutes, or until the chicken is golden and cooked through and the vegetables are tender.
Dark Chocolate & Yoghurt Banana Bites

Ingredients:
2 ripe bananas, sliced
80g dark chocolate
½ cup plain unsweetened
Optional: pinch of cinnamon or crushed nuts
Method:
Melt the dark chocolate gently in the microwave until smooth.
Arrange the banana slices on a tray or plate and add a small spoon of plain yoghurt on each slice.
Drizzle the melted dark chocolate over the top and sprinkle with cinnamon or nuts if desired.
Chill in the fridge for 20 to 30 minutes until set.
