Hearty Healthy Meals to Enjoy This Winter
Hearty Healthy Meals to Enjoy This Winter
28 May 2020

Colder nights make you want to bundle up with a warm blanket and munch down on food that makes your stomach feel like it is getting a hug.

However, when you have a fitness or health goals you want to meet it is important to not let what you eat ruin your progress. Here are some hearty meals that taste good and will help you keep on track of your healthy goals.

Vegetarian potato pizza

A cheat meal with a healthy twist: a combination of pizza (who doesn’t love pizza?!), vegetables to help you munch guilt-free, and the Beyoncé of all veggies, potatoes. This is a perfect meal for when you are too lazy to whip up a meal that will take hours to prepare on those cold winter days. The ingredients are simple; potatoes, mozzarella, olives, and thyme. You can find out how to make this healthy cheat meal here.

Mushroom and potato soup on the go

Having a meal that is easy to make and can be eaten on the go comes no closer than having mushroom and potato soup. This low-calorie meal that is vegetarian friendly will need; 1 tbsp of rapeseed oil, 2 large onions, 20g of dried porcini mushrooms, 3 tsp of vegetable bouillon powder, 300g chestnut mushroom (chopped), finely grated garlic cloves, 300g diced potatoes, 2 tsp of fresh thyme, 4 carrots finely diced, and 2 tsp of finely chopped parsley. Heat the oil in a pan and add the onions that need to be fried for 10 minutes or until they are golden.

Add the rest of the ingredients and stir until they start to turn brown. Proceed to pour 1.2 litres of boiling water while stirring in the pot. You can serve once the ingredients have settled nicely into the water and serve. There is the option of chilling the ingredients and serving it the next day.

Something meaty for you to eat

Sometimes you just crave something meaty with fries on the side without the unhealthy ingredients thrown in the mix. You can try the steak goulash sauce with sweet potato fries for something that will tantalize your taste buds and doesn’t come with the guilt. This dish satisfies all of your 5-a-day nutritional needs, which is a must during winter.

Slow cooked lasagne

You can always take guilty pleasure foods and switch them up by making them healthier. Instead of going for the traditional way of making lasagne that can be unhealthy, opt to include lean meat, celery sticks that are finely chopped, carrots that are diced, and whole wheat flour lasagne sheets. The preparation time can take longer, but the results are heavenly. Include a side of fresh salad and you are bound to have a party in your mouth and a comforting hug that resonates from deep within your belly.
